more weeks and I think we will be ready to harvest my bananas. I am a
bit excited because the bats and possums have seemed to have left them
alone. I have been told to harvest now and hang in the garage to ripen
which might be a good idea. Banana cake here we come! Recipe below.
BANANA CAKE
Makes 2 loaves. 1 to freeze.
3 cups SR Flour
1 cup Raw sugar
1 tsp Baking soda
2 tsp Nutmeg
3 Eggs, beaten
4 ripe Bananas, mashed
125g Butter, melted
1/4 cup Milk
1 tsp vanilla essence
1 tsp Salt
1/2 cup Golden syrup (optional)
Sift flour and baking soda in a large bowl, add nutmeg, sugar and salt . In another bowl melt butter and add milk, vanilla essence and mashed banana along with beaten eggs and syrup if using. Pour mixture into flour and mix to just combined, here you can add some chopped chocolate if you feel like it. Pour into loaf tins and cook at 160c (fan forced) for 50-60mins depending on your oven. YUMMY!
