GREEN CHERRY TOMATO SALSA VERDE


WHATS IN IT

7cups             Green tomatoes (halved)
1                    Red onion (chopped)
3                    Garlic cloves
1/2cup            Coriander (cilantro)
1/2cup           Lime juice
1tsp               Salt
2tsp               Jalepeno (I used my homemade pickled jalepenos, you can use fresh)
2tsp               Sugar (optional)

WHAT TO DO

Halve tomatoes and put into a food processor and pulse until finely chopped.

  Pour into a heavy based saucepan. Place the onion, garlic, coriander and jalepeno into processor and pulse until fine then add to the tomatoes.

Bring to the boil and add lime juice, simmer for 5-10 minutes, mix in salt to taste and sugar if its bitter.

Divide into sterilized jars and seal.
