PICKLED GREEN CHERRY TOMATOES



 WHATS IN IT

2 cups              Green cherry tomatoes halved
1 cup                White vinegar
1 cup                Water
2tsp                  Salt
2tsp                  Black mustard seeds
2tsp                 Juniper berries
2tsp                 Chilli flakes
2tsp                 Whole mixed peppercorns
2                      Bay leaves
2                      garlic cloves
2                      Red chilli small halved

WHAT TO DO

Wash and dry tomatoes then halve them.  Have your sterilized jar ready and put in mustard seed, juniper berries, peppercorns and chilli flakes.

Heat vinegar, water and salt in a small saucepan and boil until salt dissolves, around 10 minutes. Meanwhile put tomatoes into jar prettily and your bay leaf around the outside. Pour vinegar mixture over tomatoes until nearly to the top. Add garlic and your chilli and seal. Leave to cool then store in a dark place.
